The brothers have coached the club for the past two seasons, taking the club to a grand final last season and building a coaching record of 27 wins and five losses.
Steve, 29, said he wanted to take a break from coaching.
"Coaching is fairly time consuming job and I have three young kids, all under the age of four, so that is the main reason," he said.
Steve, who won the Toohey Medal in his first season of Wimmera Football League last year, said they informed the Eagles' players of their decision at training last week and wanted to get their intentions out in the open to allow the club time to find a replacement.
He said they remained committed to deliver the club a premiership this season.
"We got ourselves in a position to do that last year and this year we're sitting second," he said. "The ultimate goal is to win a flag. As for next year, we have full intentions of hanging around but at this stage we are 100 per cent focused towards this year."
Grant, 26, said he enjoyed his time in the role.
"It's been a good couple of years, hopefully we can finish it off well," he said.
"Winning the premiership would be the perfect way and it would mean everything, not only to Steve and I but for the whole club.
"It's going to be very tough. Horsham always play well at the end of the year, but we rise to the challenge of finals too.
"We've beaten Horsham once and that has given us a lot of self-belief."
Warrack Eagles president David Stewart thanked the Schultz brothers for their service to the club as coaches.
"They've been exceptional," he said.
"They are great leaders on the field, as well as off it, and are the ultimate professionals.
"They have brought a lot of success to our club and instilled great discipline in our players.
"Both are passionate about their football and are quality young men.
"They have dedicated a lot of time to this football club and we are hopeful they'll stay on as players."
Mr Stewart said the club had formed a working party to appoint a new coach.
"The timing of their decision gives us time to make an extensive search," he said.
"We'll be looking inside and outside of the club.
"We feel the football club is in a strong, viable position and we have a strong list, so we are not going to rush a decision."
The Eagles are the fourth Wimmera league club already looking for new coaches, with Ararat's Scott Turner, Dimboola's Gary Davidson and Stawell's Andrew Bach having also announced their intentions to step down as senior coaches at the end of the season in recent weeks.
