Lightly flour both sides of a thin slice of haloumi, then gently pan-fry in butter on each side for 30 seconds until browned and melting. Drizzle with extra virgin olive oil and serve with a wedge of lemon.
2. Fritters with orange blossom honey
Make fritters by dissolving 15g fresh yeast and 1tsp of sugar in 2½ cups of warm water. Add 3½ cups of plain flour and beat well. The dough should be elastic and wet. Add chopped mint then take a small ball of dough, insert a small square of haloumi into the middle and fry in hot oil in a deep fryer for 2 minutes. Drizzle orange blossom honey over hot fritters and serve immediately.
3. Lebanese pie
Make dough by dissolving 10g yeast in warm water with 20ml oil. Add 500g baker's flour, a pinch of salt and knead well. Roll out into 20cm rounds. Mix 1 sliced sucuk (Lebanese sausage), 1 diced red onion, 2 diced tomatoes and grated haloumi, and place in the centre of the rounds. Fold dough over to make a semi-circle and seal. Bake in a hot oven until golden brown.
Mix grated haloumi, 400g chopped, blanched and drained spinach, 1 chopped red onion and mint. Spread on pizza bases made with the same dough as the pie, bake in a hot oven and serve with lemon and chilli.
5. Salad with tomatoes
Slice 4 vine-ripened tomatoes and 1 red onion. Toss with mint, parsley, coriander and pitted green olives. Grill 8 slices of haloumi until browned and place on the top of the salad. Dress with extra virgin olive oil and season. Serve immediately.
