Twelve Apsley farming families pooled their money together to buy the 166-year-old hotel in January.

Venue manager Andrew Martin said the hotel had undergone significant work.

"We've tried to restore the building back to its former style, as much as we could," he said.

The art deco facade has been rejuvenated, and the interior has received some tender loving care.

"You'll come in here and the story of the hotel will be prominent," Mr Martin said.

The Border Inn Hotel is one of Victoria's oldest hotels.

From Sunday it will be open for breakfast, lunch and dinner seven days a week .

South Australia-based chef Ian Perry has overseen the menu design, and will also mentor the hotel's kitchen staff. Mr Perry, originally from the UK, trained in the Roux family's Michelin-star restaurants.

"He has worked at Hollick Wines in Coonawarra, South Australia, and at The Barn Palais in Mt Gambier," Mr Martin said.

"We spent three months researching to provide a completely local menu, to the point where we're actually buying our own livestock and processing those. "

Mr Martin said the Border Inn Hotel would be open from 8am until 11pm most weekdays, and open until 1am on Saturday and Sunday.

The Border Inn Hotel also offers accommodation.

The official opening starts at 6pm on Saturday.

Buses will run from Edenhope, Nhill, Frances and Naracoorte.

Mr Martin said people could call the Border Inn Hotel on 5586 1205 to reserve a seat.

West Wimmera Shire Mayor Ron Hawkins welcomed the hotel's opening.

He said the syndicate investor model might inspire projects in other municipalities.
