Glenn and Karen Tempest, Tracey Skinner and Cameron Abraham announced their intentions on Thursday to reopen the cafe in late February or early March.
Both couples are moving from Melbourne, with Glenn and Karen planning to settle in Natimuk and Tracey and Cameron settling at Mitre.
“Many of you already know us in one way or another,” they wrote on Facebook.
“We are climbers, guidebook authors and editors, foodies and wine appreciation members, general larrikins and now cafe owners.
“Karen and Tracey will be managing and running the cafe.
"Glenn and Cameron think that they will be wandering around in smoking jackets, sipping macchiatos and nibbling on tapas while sweet-talking all the customers.”
Food would be modern Australian and ‘global fusion’.
The cafe would also offer art displays and sales.
Simon Mentz and Steve Bell opened the Natimuk Cafe in April 2010, but its doors closed earlier this year.
It reopened briefly for the Nati Frinj Festival last month.
