The couple celebrated the business’ sixth year this month.
They started the business when they were aged 21 and 22, which was one of the reasons why they chose the name Bonnie and Clyde’s.
“Obviously we have very different careers from Bonnie and Clyde, but there are some similarities,” Mr Lukazsewski said.
“We really like the gangster theme and Emily and I are the same age Bonnie and Clyde were when they were killed.”
In the six years since it has grow from five staff to 30 and now boasts a fleet of six delivery cars and numerous gluten free dining options.
The restaurant has grown from 80 to 120 seats and there is a selection of 12 craft beers on tap.
The couple are proud of what they have achieved.
The pair spent time working in Castlemaine and Kyneton before settling in Horsham.
They were initially against opening a pizzeria in the town, but spotted a gap in the market.
“We’ve grown from using five tonnes of cheese each year to between 13 and 14 tonnes, the demand is that strong,” Mr Lukazsewski said.
The couple also altered the restaurant from fine dining to a more family oriented atmosphere. Mrs Lukazsewski said they were happy with the restaurant’s growth, particularly the gluten free and organic options.
“No one took us seriously when we first opened,” Mrs Lukazsewski said.
“We used to have people come in and ask to see the owner, then do a double take when we said we owned the restaurant.
“It was a lot of hard work and a lot of sacrifice but we scraped through and can now sit back and look at what we created.”
Now well settled in Horsham, the couple and young son son Ambrose, 17 months, are enjoying their success.
Mr Lukazsewski encouraged any young person dreaming of opening their own business to go for it.
“We have only been able to do this because of the support we have received from Horsham,” he said.
