Melissa McFarlane and Dorian Doti opened Wheat Milk Sugar in Hopetoun in March 2016 and eventually moved its pasta, gelato and coffee shop to Horsham. However, the store closed on June 1 this year.

Ms McFarlane said their attention was split between the shopfront and factory. She said the pasta and gelato served in store was made fresh everyday at the factory.
“The factory is the heart and soul of what we do and we wanted to focus on the core of our business, which is making pasta and gelato and roasting coffee,” she said.
Ms McFarlane said the vision of their new brand Gusto Fresh Pasta and Sauces was to supply fresh pasta and gelato to restaurants, pubs and families. She said focusing solely on the factory would ensure each product and every batch was fresh and up to standard.
She said it was also an opportunity to perfect new recipes.
“There’s so many gelato flavours we want try and now that we can hunker down in our factory we can develop those recipes,” she said.
