The Norton vines were planted three years ago, but this is the first year it has been harvested.
Norton Estate Wines owner Chris Spence said a small amount of the variety will be bottled in six months time.
Mr Spence said they reached out to an American winemaker whose "claim to fame" was Norton and they received coaching tips.
"We have fruit off the Norton vines and will have a small batch of wine, which will be an experimental batch to see where it goes and what it does. At this stage, it is looking very promising," he said.
"What we will do from this batch of wine is find out what oak it needs to mature in and work out what is needed to complement the wine. We will be doing in-depth tasting with our winemakers."
Mr Spence said the new addition could be available at the cellar door in six months.
"We will see what the wine does. If it goes as it is at the moment we will do special tastings for people at the cellar door," he said.
"Hopefully, next year we will get more fruit off the older and newest vines and have bigger volumes."
Mr Spence said the winery was the first in the state to grow the variety and the second in Australia.
