Three years ago, Dan Lukazsewski cut pasta dishes from the menu of Bonnie and Clydes, the Horsham pizzeria he started with partner Em.

The couple always intended to bring them back though, and later this month that goal is set to be realised when they open a new shopfront in the Wilson Street Gateway complex.
"We outgrew pasta at Bonnie and Clydes and had to shrink the business model," Mr Lukazsewski said.
"It made sense to run wholefood salads instead to concentrate on doing those things right - it was getting a bit out of hand being so big.
"The opportunity arose to use that building, and it seemed like the right time to do it now."
Mr Lukazsewski said the new store, Inglorious Pastas, was named after the old pasta menu at Bonnie and Clydes, itself a play on the name of the Quentin Tarantino film Inglourious Basterds.
He said it would employ two full-time staff and six casuals.
Mr Lukazsewski said the couple chose the Gateway building because of the investment taking place at that end of Horsham CBD.
"It was about the location, the visibility, the foot traffic and that area being developed with the service station a bit further down," he said.
"I don't believe there is any other area in Horsham that is having that many dollars put into it as that area.
"We're just about good to go, there's still a little bit of construction left but most of the equipment has been moved in."
Mr Lukazsewski said nearly everything on the new menu would be gluten free, and there would be vegan and dairy-free options.
"Something I've learned in the nearly 10 years at Bonnie's is there's been a real growth in the choices people have with their diets, whether that be for allergies or other reactions," he said.
