Beau, who won two premierships with the Demons in 2017 and 2018, will take on an assistant coaching role at the club.
The lifelong Demon said leaving Horsham was the "hardest football decision I've ever had to make".
"I've grown up around the club and have loved it - I'll always be a part of the Horsham footy club," Beau said.
"But at the same time I think it was the right decision, to open up a few new doors and help grow my leadership skills.
"An assistant coaching role was pretty appealing, and just listening to where the club was at, and where the playing group wants to go, it was all really positive.
"It's a pretty exciting atmosphere at the moment."
Beau, 23, said he was ecstatic to remain alongside his brother Dawson, 20.
"We love playing footy together," he said.
"Dawson and I played together in the 2018 premiership, and that was something pretty special.
"When the assistant coaching role was proposed, he was really supportive, same with my whole family and my girlfriend as well. They said they would back me no matter what, which definitely helped me make the decision."
Newly appointed Edenhope-Apsley coach Guy Smith said it was two valuable inclusions that added flexibility.
Smith coached the duo in the Wimmera league's interleague victory this season.
"Dawson ... probably because of his height and agility, can be an agile lock-down defender," Smith said.
"But he has got a few tricks up his sleeve - it gives us plenty of flexibility, which is what we're after. We don't want to be predictable."
The Saints have also secured the services of Aaron Hayes, a two-time premiership player with Kyabram. Hayes' partner Emma Ryan is coaching Edenhope-Apsley's A Grade netball side.
Smith was also hopeful of announcing more signings in the coming weeks.
The Saints have lost the services of Toohey medallist Jak Ryan, former playing-coach Chris Oliver and key forward Carl Slape, who have returned closer to home in Mount Gambier.
