Now, award-winning sommelier Simon Freeman is bringing the world's best wines to the Grampians.
The former restaurant manager, who's resume includes Brae in Birregurra in the Royal Mail in Dunkeld, has ventured out into a new business - Grampians Wine Cellar.
Showcasing historic favourites Seppelts and Bests alongside hidden gems Sub Rosa and Storey Wines, Mr Freeman said the Halls Gap business fills a void in the regional economy.
"I had noticed for quite a long time, as a visitor, that even though it's a wine region it is not very well represented within the region," he said.
"A lot of the wineries that I had on my wine list in my restaurants didn't have cellar doors - you basically can't buy their wines in the Grampians.
"That just doesn't make sense."
Reflecting on his experiences in the Margaret River, a highly regarded wine-tourism destination in Western Australia, Mr Freeman realised where the Grampians region was falling short.
"I know a lot of people come here to go to the wineries, but they are very spread out," he said.

"I thought there needs to be a place you could go to get all of the wines - not just the big producers but the smaller guys too - without driving for hours."
Mr Freeman said he hopes his relationship with the winemakers will give customers a unique experience.
"I love wine; I have been talking about wine for a long time," he said.
"I know most of the winemakers who have wines on the shelf, either personally or I've met them or visited their wine at wineries, and I want to be able to kind of share all their stories."
He said while Grampians Wine Cellar is not a cellar door per se, visitors get a similar experience.
"There are four counter seats inside and for more out on the deck," he said.
"I'm not going to be doing tastings ... (but) you could buy wines by the glass or the bottle and sit outside with one of the best views in Halls Gap.
"I look forward to customers being able to sit out there in the summer and share a bottle of wine with a couple of friends; it will be a really nice experience."
The Heath Street business holds a variety of wines, including local shiraz, riesling and tempranillo, as well as Mr Freeman's personal collection from the past two decades.
"I've had a few people come in say, 'Wow, a 2010 Chevy'... it's really good to me to be able to have those little hidden gems within the shop."
