The All-Australian representative capped off a brilliant individual season, polling 27 votes, 10 votes clear of runner-up.
There was a four-way tie for second, with his brother Kalkee's Grant Schultz, Taylors Lake's Pat Purcell, Harrow-Balmoral's Matt Ward and Rupanyup's Nathan McNally finishing on 17 votes.
Purcell was also named best under-21 player.
Schultz will now look to cap his brilliant season with a grand final win against Harrow-Balmoral on Saturday.
It will be his last match before taking on his new role as co-coach of Wimmera Football League side Warrack Eagles, alongside brother Grant.
Schultz said while it was humbling to win individual awards, he was only focused on helping the Kees win their third grand final in a row.
"A good way to go out would be with a win on the weekend," he said.
Schultz said it was pleasing for the Kees to have polled well in the vote count.
"It was good there were a few Kalkee players in the top five and Tim Wade and Josh Mibus polled well too," he said.
Grant Schultz had his best league best and fairest finish.
He said he was surprised to be second to his brother.
"I haven't come close before. Coming here I didn't expect that," he said.
"It shows how even everyone is."
Grant Schultz said he was keen to leave the league with another premiership medallion.
"You never lose the itch to win a grand final. I'm really looking forward to it," he said.
A previous winner of the medal, Ward said he hadn't expected to do well.
"I didn't have a clue I was runner-up," he said.
"It's nice to get individual awards but I look forward to playing in the grand final."
Edenhope-Apsley teenager Emma Ryan won the A Grade best and fairest from Taylors Lake's Kiewa Lovett.
